Celiac Disease

Celiac Disease, also known as Sprue, is an abnormal immune reaction to the protein found in grains, such as wheat, barley and rye. It is not found in rice. Any food that contains these grains can produce a reaction which causes the small intestine to not absorb nutrients properly. The signs and symptoms can vary from bloating to severe diarrhea and deficiency of iron due to the lack of absorption to severe weight loss because most all the nutrients the patients eats are not absorbed. It can be associated with other illnesses such as diabetes and thyroid disease.

The therapy is a special diet which avoids these grains. Dietary education is very important and can be provided through the Digestive Health Center.
